Profile Enhancements - Manipulating custom profile fields via a plugin

Hi there,
I need to manipulate the value of a custom profile field to display someone's star-sign in postbit.
Basically they choose their star sign from a dropdown menu in the profile (custom profile field).
Then I use the plugin to remove some special chars from the value of the profile field (stuff like ü, ä and ß).
And then I can use it in a template the usual way. $profilefield[X].gif.

So, does anyone have any hints? I'd be awesomely thankful! I'm using vB3.7 gold by the way.
